vegan, refined sugar-free
I don't know about you but these muffins SCREAM fall to me! They're so cozy and perfect for a cold morning.

INGREDIENTS (muffin batter):

1/2 cup applesauce
1/2 cup almond milk
1 tsp vanilla extract
1/3 cup coconut sugar
1 3/4 cup all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp cinnamon
1 apple, peeled and chopped
INGREDIENTS (oat topping):
1/3 cup oats
1/4 tsp cinnamon
2 tbsp coconut sugar
3 tbsp softened coconut oil (sub softened vegan butter)
DIRECTIONS:
Preheat oven to 350 degrees F and line a muffin pan.
In a small bowl, combine all the ingredients for the oat topping and set aside.
In a medium bowl, mix the applesauce, almond milk, vanilla, and coconut sugar together.
Add in the flour, baking powder, baking soda, and cinnamon. Mix again.
Fold in chopped apple.
Scoop batter into muffin ton and sprinkle the top of each with some of the oat topping.
Bake for 10-15 minutes.
