cinnamon crunch banana bread

I made this recipe as part of a collab with some other health foodies on Insta! We all made a recipe using bananas and everything came out so good! I took my classic best ever banana bread recipe and made it extra cinnamony :)

INGREDIENTS:

  • 2 bananas

  • 1/4 cup olive oil

  • 1 tsp vanilla extract

  • 1/2 cup almond milk

  • 1/3 cup coconut sugar

  • 1 3/4 cup all purpose flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • Cinnamon to taste (plus some extra for the top)

  • 1 cup Cascadian Farm Cinnamon Crunch Cereal (sub Cinnamon Toast Crunch)

DIRECTIONS:

  1. Preheat oven to 350 degrees F and line a loaf pan with parchment paper.

  2. In a medium bowl, mash the bananas. Add the olive oil, vanilla, almond milk.

  3. Mix, and add the coconut sugar. Mix again.

  4. Add the remaining dry ingredients except for the cereal.

  5. Once the batter is mixed together, pour it into the lined loaf pan.

  6. Shake some extra cinnamon on top and swirl it in with a knife.

  7. Top with 1 cup of cereal. Gently press it into the top of the batter.

  8. Bake for about 35 minutes.
