vegan, refined sugar-free
Muffin tops are without a doubt the best part of a muffin. Am I wrong??? I ordered this muffin top pan off of Amazon and you should too :) This is only the first of many muffin top recipes to come. I can't wait to make more flavors! The texture of these are insane by the way. So soft and fluffy with lots of melty dark chocolate!
INGREDIENTS:
1/2 cup creamy cashew butter
1/3 cup coconut sugar
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water. Mix and let sit for 5 min.)
1/2 cup almond milk
2 tsp vanilla extract
1 cup all purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/3 cup dark chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees F and grease a muffin top pan.
In a medium bowl, mix together the cashew butter, coconut sugar, and flax egg. Add in the almond milk and vanilla, and mix again.
Add the dry ingredients (except for the chocolate chips) and mix.
Fold in chocolate chips.
Fill each muffin top space with batter.
Bake for about 10 minutes.
