mini banana breads

vegan, gluten-free

 

Literally thought of these as I was falling asleep last night because tbh that's when I come up with most of my recipes LOL and I can say they came out exactly as I imagined! Like tell me these are not the most adorable baby banana breads you've ever seen!! UGH I can't get over them. Anywaysss here's the recipe!

INGREDIENTS:

  • 2 mashed bananas

  • 1/4 cup coconut sugar

  • 1 tsp vanilla

  • Cinnamon to taste

  • 1/2 cup almond butter

  • 1 cup oat flour

  • 1 tsp baking powder

  • 3/4 tsp baking soda

  • Sprinkles and mini chocolate chips (optional)

DIRECTIONS:

  1. Preheat oven to 350 F and grease a mini loaf pan.

  2. In a medium bowl mash the bananas.

  3. Mix in the coconut sugar, vanilla, cinnamon, and almond butter.

  4. Add the oat flour, baking powder, and baking soda. Mix until batter is combined.

  5. Evenly divide into mini loaf pan.

  6. Top with sprinkles and chocolate chips, and bake for 10 min.
