mini cinnamon swirl loaves

I wasn't sure what to call these because I can't tell if they have a more banana bread-like or cake-like texture, but we're just gonna go with mini loaves because that sounds the cutest LOL. I got so many DMs about this recipe after I posted a picture on my story! So excited that you guys are excited about it!

INGREDIENTS (batter):

  • 3/4 cups almond milk

  • 1/3 cup applesauce

  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water. Mix and let sit for 5 min.)

  • 3/4 cup white sugar

  • 2 cups all purpose flour

  • 1/2 tbsp baking powder

  • Cinnamon to taste (I don't usually measure cinnamon; you can use however much you like.)

INGREDIENTS (cinnamon sugar mixture):

  • 1 tbsp coconut sugar

  • A couple shakes of cinnamon

DIRECTIONS:

  1. Preheat oven to 350 degrees F and grease a mini loaf pan.

  2. Mix all wet ingredients in a bowl.

  3. Add in the dry ingredients and mix again.

  4. Divide batter into each mini loaf section of the pan.

  5. In a small bowl, mix together the ingredients for the cinnamon sugar mixture.

  6. Pour a little bit of the mixture on top of each mini loaf.

  7. Using a knife, swirl the cinnamon sugar mixture around the top of each loaf.

  8. Bake for about 25 minutes.
