no-bake salted pumpkin cookie dough bars

vegan, gluten-free, refined sugar-free

 

3rd pumpkin recipe in a row and I think this one is my favorite! You NEED these in your life. Especially this week because its been feeling extra long and I know these are helping me get through it!! Vegan, gluten-free, and refined sugar-free NO-BAKE SALTED PUMPKIN COOKIE DOUGH BARS<3 I’m telling you these won’t last long in your house so be prepared to make another batch asap :) ⁣

INGREDIENTS:

(Cookie dough layer)

  • 3/4 cup oats

  • 1/3 cup pumpkin puree

  • 1/4 cup almond butter

  • 3 tbsps maple syrup

  • Pumpkin pie spice to taste

(Dark chocolate layer)

  • 1/2 cup dark chocolate chips

  • 1 tbsp coconut oil

  • Maldon salt

DIRECTIONS:

  1. Mix all ingredients for the cookie dough together in a bowl.

  2. Line an 8x8 pan with parchment paper and spread the cookie dough in an even layer.

  3. Freeze for 30 min.

  4. Melt the dark chocolate and coconut oil in a small bowl.

  5. Pour chocolate over the cookie dough layer and spread out evenly.

  6. Top with some maldon salt.

  7. Freeze for at least 20 minutes.
