oatmeal cinnamon sandwich cookies

vegan, gluten-free

 

I have not had time to bake lately, but I'm officially done with school now so you know what that means!! I've been wanting to make sandwich cookies for awhile and these definitely did not disappoint. The texture is so soft and chewy, and they have the perfect amount of cinnamon flavor. I added coconut whip to the middle, but nut butter would be really good, too. Your choice!

INGREDIENTS:

  • 1 cup oats

  • 1/4 cup coconut sugar

  • 1/4 tsp baking soda

  • 1/2 tsp cinnamon

  • 2 tbsp oat flour

  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water. Mix and let sit for 5 min.)

  • 1/4 cup creamy almond butter

  • 2 tbsp maple syrup

  • 2 tbsp almond milk (sub any plant milk)

DIRECTIONS:

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.

  2. Combine all dry ingredients in a bowl.

  3. Add in the wet ingredients and mix until a dough forms.

  4. Scoop spoonfuls of dough onto the baking sheet. You should get 8 cookies, so 4 sandwich cookies in the end.

  5. Bake for 15-20 minutes and let cool completely!

  6. Add coconut whip or nut butter to the middle of two cookies.
