vegan, gluten-free, refined sugar-free
Been a LONGGG time since I’ve made something with peanut butter, so when @woodstockfoods sent me some I couldn’t resist! These peanut butter fudge brownie COOKIES are a must!! The fudge factor is next level let me tell ya :)
INGREDIENTS:
1/2 cup smooth peanut butter
1/4 cup coconut sugar
1 flax egg (1 tbsp ground flax and 3 tbsps water. Mix and let sit 5 min.)
2 tbsps cacao powder
1/2 tsp baking powder
Dark chocolate chips
Maldon salt
DIRECTIONS:
Preheat oven to 350 F and line a baking sheet with parchment paper.
In a small bowl, combine all the dry ingredients (except the chocolate chips and maldon salt).
Add the wet ingredients, and mix until a thick and sticky dough forms.
Scoop onto baking sheet and press down with the back of a spoon.
Top with a few dark chocolate chips and a sprinkle of maldon salt.
Bake for 10-12 minutes.
