pumpkin chocolate chunk donuts

vegan, gluten-free, refined sugar-free

 

The first of many pumpkin recipes this season…PUMPKIN CHOCOLATE CHUNK DONUTS that literallyyyy melt in your mouth! They probably would have a cakier texture if I used more oat flour but I ran out and had to resort to almond flour :( If you know me you know I absolutely HATE baking with almond flour. I can never get recipes with it right but I have to say these surprised me! SAVE AND MAKE to satisfy all your pumpkin cravings!!!⁣

INGREDIENTS:

  • 1 cup pumpkin puree

  • 1/3 cup maple syrup

  • 1 flax egg (1 tbsp ground flax and 3 tbsps water. Mix and let sit 5 min.)

  • 1 cup almond flour

  • 1/2 cup oat flour

  • Pinch of baking powder

  • Pinch of pumpkin pie spice

  • Chocolate chunks

DIRECTIONS:

  1. Preheat oven to 350 F and grease a donut pan.

  2. Mix all the wet ingredients together.

  3. Fold in the dry ingredients (minus the chocolate chunks).

  4. Fill up a donut pan with the batter and top each with a few chocolate chunks.

  5. Bake for 20-25 minutes.
