Look how cute these cookies are. Only 5 ingredients for the cookies and 2 for the frosting! The cutest Valentine's Day treat. My mom told me these were her favorite thing I've baked :) My favorite thing about these has to be that the icing is NATURALLY colored with raspberries. They came out amazing!
INGREDIENTS (cookies):
1 1/2 cups almond flour
1/3 cup apple sauce
1 tsp baking powder
1/4 cup coconut sugar
1 1/2 tsp vanilla
INGREDIENTS (frosting):
Handful of raspberries
1/3 cup coconut whip
DIRECTIONS:
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Mix all ingredients for the cookies in a bowl.
Scoop spoonfuls of dough onto the baking sheet and flatten into a round, flat shape.
Bake for 15-20 minutes and let cool completely!
In a small bowl, mash the raspberries and fold in the coconut whip.
Spread frosting on top of the cooled cookies and enjoy!
