valentine's day frosted sugar cookies

vegan, gluten-free, refined sugar-free

 

Look how cute these cookies are. Only 5 ingredients for the cookies and 2 for the frosting! The cutest Valentine's Day treat. My mom told me these were her favorite thing I've baked :) My favorite thing about these has to be that the icing is NATURALLY colored with raspberries. They came out amazing!

INGREDIENTS (cookies):

  • 1 1/2 cups almond flour

  • 1/3 cup apple sauce

  • 1 tsp baking powder

  • 1/4 cup coconut sugar

  • 1 1/2 tsp vanilla

INGREDIENTS (frosting):

  • Handful of raspberries

  • 1/3 cup coconut whip

DIRECTIONS:

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.

  2. Mix all ingredients for the cookies in a bowl.

  3. Scoop spoonfuls of dough onto the baking sheet and flatten into a round, flat shape.

  4. Bake for 15-20 minutes and let cool completely!

  5. In a small bowl, mash the raspberries and fold in the coconut whip.

  6. Spread frosting on top of the cooled cookies and enjoy!
