vegan, refined sugar-free
This banana bread recipe lives up to its name! Best I've made. That's really all I have to say.
INGREDIENTS:
2 bananas
1/4 cup olive oil
1 tsp vanilla extract
1/2 cup almond milk
1/3 cup coconut sugar
1 3/4 cup all purpose flour
2 tsp baking powder
1/2 tsp baking soda
Cinnamon to taste
1/4 cup mini chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees F and line a loaf pan with parchment paper.
In a medium bowl, mash the bananas. Add the olive oil, vanilla, almond milk.
Mix, and add the coconut sugar. Mix again.
Add the remaining dry ingredients except for the chocolate chips.
Once the batter is mixed together, fold in the chocolate chips.
Pour batter into the lined loaf pan.
Bake for about 35 minutes.
